VEGETARIAN RECIPES

Cottage Cheese Meatballs: By Sandy Oslund

 

4 eggs, 1 large onion, chopped fine & sautéed, 1/2 C celery, chopped fine, 1/2 C dry cottage cheese

1/2 C sour cream, 2 t chicken seasoning, 1 t salt, 1 t garlic powder, 1 t onion powder, 2 T parsley flakes

1/2 t oregano, 1 C wheat germ, 1/2 C cracker crumbs, 1-1/2 C bread crumbs, 1 C ground pecans

Instructions: Form balls and fry. Place in an oblong casserole dish & pour Italian tomato sauce over top. Sprinkle generously grated cheddar cheese and parmesan cheese. Bake at 350 for 30 minutes: Yield 40 balls

 

 

Special K Roast

 

1/2 C margarine, 1 C onions, chopped, 1 C pecans, chopped, 4 T chicken seasoning Sauté, 6 eggs

1/2 C milk, 1 qt. cottage cheese, 3-4 C Special K cereal, 1-13 oz. can Soya Chicken

Instructions: Instructions: Put in a lightly greased baking dish & bake until brown. Bake at 350 for 1-1/2 hours.

 

 

Apple-Oatmeal Cookies

Instructions: Bake at 375 for 10 minutes: Makes 3 dozen cookies

1 1/2 C rolled oats, 3/4 C flour, 3/4 C whole wheat flour, 1/2 C brown sugar, 1 t baking powder, 1/4 t baking soda, 1/4 t salt

1-1/2 t cinnamon, 1/2 c raisins, 1 C finely chopped apples, 1 egg slightly beaten, 1/2 C honey, 1/2 C oil, 1/3 C milk

 

LENTIL SOUP

2 C of Lentils with water as needed, 2 diced potatoes, 2 carrots, 1 onion, 2 celery stalks

Flavors: thyme, sweet basil, bay leaf, George Washington broth

Instructions:

* Add package of broth, plus salt. Boil in water for 20 minutes, simmer for 1 hour, add 1 qt. of tomato juice

 

 

ZUCCHINI QUICKBREAD

2 C. grated Zucchini, 2/3 C oil, 2/3 C. honey, 2 eggs, 2C flour, 2/3 t. salt, 2/3 t baking soda/powder

2 t cinnamon, 2/3 C chopped nuts

Instructions: Bake 1.5 hours at 325 degrees

 

 

LAZY CABBAGE ROLLS

1 cup of raw rice, 1 t salt, 1/2 c oil, 1/2 C whipping cream, 2 1/4 C tomato juice

1 to 1 1/2 C sliced cabbage, 1 medium onion.

Instructions: Cover & bake 1 hour

 

 

TOFU-OAT-PECAN PATTIES

1 box tofu, 4 C oats, 1 C pecan meal, 1/4 C chopped cashews, 1 small onion, 1 garlic, 2 t. salt, 1/2 C tomato sauce, 1 C fresh corn

Instructions: form patties, put flour slightly over sheets. Bake at 400 degrees for 15-20 min. both sides. Cover with tomatoes sauce.
